It is characterized by its rich, white gravy made with a combination of yogurt, cashews, and aromatic spices. Here's a concise version of a white chicken recipe:

Ingredients:

  • 1 kg bone-in chicken pieces (skin removed)
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup plain yogurt
  • 1/2 cup cashews, soaked in warm water
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon white pepper powder
  • 1/4 teaspoon cardamom powder
  • 1/4 cup heavy cream (optional)
  • Fresh cilantro leaves, chopped (for garnishing)
  • Ghee or cooking oil
  • Salt to taste

Instructions:

1:In a blender or food processor, grind the soaked cashews into a smooth paste. Set aside.

2:Heat ghee or oil in a large pan. Add the chopped onions and sauté until golden brown.

3:Add t1he minced garlic and grated ginger to the pan. Sauté for a minute until fragrant.

4:Add the chicken pieces to the pan and cook until they are browned on all sides.

5:In a bowl, whisk together the yogurt, cashew paste, cumin powder, coriander powder, turmeric powder, garam masala powder, white pepper powder, and cardamom powder.

6:Pour the yogurt mixture into the pan with the chicken. Stir well to coat the chicken evenly with the mixture.

7:Cover the pan and cook on low heat for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.

8:If desired, stir in the heavy cream to make the gravy richer and creamier. Cook for another 5 minutes.

9:Taste and adjust the salt and spices according to your preference.

10:Remove from heat and garnish with chopped cilantro leaves.

11:Serve the white chicken hot with naan bread, rice, or roti.

Note: You can customize the spice levels and thickness of the gravy according to your taste. Additionally, you may add other ingredients such as saffron, almonds, or poppy seeds for variations in flavor and texture.

Ingredients: 

  • 2 cups basmati rice
  • 1 pound meat (chicken, lamb, or beef), or vegetables for vegetarian option
  • 2 onions, thinly sliced
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, slit
  • 1/2 cup plain yogurt
  • 2 teaspoons biryani masala powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Whole spices (such as bay leaves, cardamom, cinnamon, and cloves)
  • Fresh cilantro and mint leaves, chopped
  • Ghee or cooking oil
  • Salt to taste
  • Saffron strands (optional)

Instructions: 

1: Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2: Heat ghee or oil in a large pan. Add the sliced onions and sauté until golden brown. Remove half of the fried onions and set aside for garnishing.

3: In the same pan, add the garlic and ginger. Sauté for a minute, then add the meat (or vegetables) and cook until browned.

4: Add the chopped tomatoes, green chilies, biryani masala powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes.

5: Add the yogurt to the pan and mix it with the meat (or vegetables) and spices. Cook for another few minutes until the mixture thickens.

6: In a separate pot, bring water to a boil and cook the soaked rice until it is 70-80% cooked. Drain the rice.

7: Layer the partially cooked rice over the meat (or vegetable) mixture in the pan. Sprinkle chopped cilantro and mint leaves on top.

8: Optional: Dissolve a few saffron strands in warm milk and drizzle it over the rice for added flavor and color.

9: Cover the pan with a tight-fitting lid and cook on low heat for about 20-25 minutes, or until the rice is fully cooked and fluffy.

10: Remove from heat and let the biryani rest for a few minutes before serving. Garnish with the reserved fried onions.

11: Serve the biryani hot with raita (yogurt sauce) or a side salad.

Note: This is a basic biryani recipe, and there are many regional variations and additional ingredients you can use to enhance the flavors according to your preference.

Ingredients: 

  • 1 kg mutton (cut into small pieces)
  • 2 onions (finely chopped)
  • 3-4 tomatoes (finely chopped)
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Fresh coriander (chopped) for garnishing
  • Oil for cooking

Instructions:


1. Heat oil in a large pan or pressure cooker over medium heat.

2. Add the chopped onions and sauté until they turn golden brown.

3. Add ginger and garlic paste and cook for a minute.

4. Add the cumin and coriander seeds and cook until they start to splutter.

5. Add the mutton and cook until it turns brown on all sides.

6. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well.

7. If cooking in a pan, cover and cook on low heat until the mutton is tender and the tomatoes have completely cooked down into a thick gravy. If cooking in a pressure cooker, add 1-2 cups of water and pressure cook for 10-15 minutes until the mutton is cooked through.

8. Garnish with fresh coriander and serve hot with rice or roti.

You can adjust the spice levels according to your taste by adding more or less chili powder. You can also add other spices like garam masala or cumin powder to enhance the flavor.

  • 2-3 green chilies (sliced)
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • Fresh coriander (chopped) for garnishing
  • Oil for cooking

Instruction:

1. Heat oil in a large karahi or deep skillet over medium heat.

  • 6 cups water
  • 1/2 cup yogurt
  • 2-3 tablespoons lemon juice
  • Chopped cilantro, sliced ginger, and green chilies for garnish
  • Optional: bone marrow, sliced onions, and lime wedges for serving with the dish. 

How To Make Nihari Ghost:

1. In a large pot, heat the oil over medium-high heat. Add the sliced onions and cook until they turn translucent.

2. Add the ginger paste, garlic paste, and green chilies. Cook for a few minutes until the raw smell of ginger and garlic disappears.

3. Add the flour and stir well to combine. Cook for a minute or two until the flour turns slightly brown.

4. Add the coriander powder, cumin powder, red chili powder, turmeric powder, garam masala powder, and salt. Stir well to combine and cook for a minute or two until the spices are fragrant.

5. Add the meat and water to the pot. Stir well and bring to a boil.

6. Reduce the heat to low, cover the pot, and let it simmer for 3-4 hours until the meat is tender and falling off the bone.

7. If using bone marrow, add it to the pot during the last 30 minutes of cooking.

8. Once the meat is tender, add the yogurt and lemon juice. Stir well to combine.

9. Cook for another 5-10 minutes until the gravy thickens.

10. Garnish with chopped cilantro, sliced ginger, and green chilies.

11. Serve hot with naan bread or roti, and sliced onions and lime wedges on the side.
