Ingredients:
- 1 kg mutton (cut into small pieces)
- 2 onions (finely chopped)
- 3-4 tomatoes (finely chopped)
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1 tsp red chili powder
- 1 tsp turmeric powder
- Salt to taste
- Fresh coriander (chopped) for garnishing
- Oil for cooking
Instructions:
1. Heat oil in a large pan or pressure cooker over medium heat.
2. Add the chopped onions and sauté until they turn golden brown.
3. Add ginger and garlic paste and cook for a minute.
4. Add the cumin and coriander seeds and cook until they start to splutter.
5. Add the mutton and cook until it turns brown on all sides.
6. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well.
7. If cooking in a pan, cover and cook on low heat until the mutton is tender and the tomatoes have completely cooked down into a thick gravy. If cooking in a pressure cooker, add 1-2 cups of water and pressure cook for 10-15 minutes until the mutton is cooked through.
8. Garnish with fresh coriander and serve hot with rice or roti.
You can adjust the spice levels according to your taste by adding more or less chili powder. You can also add other spices like garam masala or cumin powder to enhance the flavor.
